Simple and Quick Yaki Udon
Yaki Udon is a flavorful, quick stir-fry dish that’s loaded with fresh vegetables, mushrooms, and your choice of protein, all coated in a savory sauce. This easy recipe uses basic ingredients and takes just 15 minutes to prepare!

Ingredients:
2 tbsp oil (divided)
2 servings (500g) frozen udon noodles
1/2 lb shrimp or your preferred protein (chicken, beef, pork, bacon, tofu, or extra veggies)
1/2 medium onion, thinly sliced
2 cloves garlic, minced
1 cup shredded cabbage
1/4 cup julienned carrot
3 mushrooms, sliced
2 green onions, chopped
Optional toppings: Kewpie mayo, bonito flakes, toasted sesame seeds, and/or additional green onions
For the Sauce:
1 tbsp dark soy sauce
2 tbsp oyster sauce
1 tbsp mirin
1 tbsp brown sugar
1/2 tsp Gochugaru (Korean chili flakes) or red pepper flakes (optional)
Instructions:
Season the shrimp (or chosen protein) with a pinch of salt and pepper. In a small bowl, mix together the soy sauce, oyster sauce, mirin, brown sugar, and chili flakes (if using) to prepare the sauce. Set aside.
To cook the udon noodles, place them in hot water for about 1 minute. Use chopsticks or a fork to gently separate the noodles. Rinse with cold water to stop the cooking process, then drain and set aside.
Heat 1 tbsp of oil in a large pan or wok over medium heat. Add the shrimp (or protein) and cook for about 2 minutes until it turns opaque. Remove from the pan and set aside.
Add the remaining oil to the pan and sauté the onion and garlic until fragrant. Then, toss in the cabbage, carrot, and mushrooms, cooking for an additional 2-3 minutes until the vegetables are tender.
Add the cooked shrimp, noodles, and sauce into the pan. Stir everything together to ensure the noodles are well-coated in the sauce. Toss in the green onions and mix thoroughly.
Garnish with your choice of toppings (optional) and serve immediately. Enjoy your delicious Yaki Udon!
